Las Lomas farm is situated in Cantón Zacatal, within the El Congo region of El Salvador, an area steeped in the country's rich coffee-growing heritage. The farm, since 1957 benefits from the fertile volcanic soils of the Santa Ana region, one of the most productive coffee-growing zones in the country. Despite its small size, El Salvador plays a significant role in the global coffee industry, particularly through its high-altitude farms that produce world-renowned specialty coffees. The varietals cultivated in this region, such as Bourbon, and Pacas, thrive in the mineral-rich volcanic soils. These beans are celebrated for their vibrant acidity and balanced flavors, which often feature notes of Cheerios, Tangerine, and Milk Chocolate – a subtle sweetness. The region's volcanic microclimates and equatorial weather provide ideal conditions for producing exceptional coffee. Fairtrade coffee farming in Cantón Zacatal also supports the local economy, with many smallholder farmers contributing to the area's production. Our customers look forward to this coffee.

El Mezcal is a fine example of how the specialty coffee industry elevates small-scale producers. This micro-lot, produced by a collective of 12 farmers in Chiapas, Mexico, was initially part of a larger regional blend. E-Cafe Chiapas, an organization of growers and exporters since 2007, organized this group to focus on higher quality and recognition for their unique coffee. E-Cafe owns two farms, Finca Las Chicharras and Finca Cascadas, and helped the El Mezcal farmers improve their cultivation and processing techniques. In 2016, E-Cafe hosted the farmers at Finca Las Chicharras to teach them methods for producing specialty coffee. Three years later, they assisted in building raised beds to improve drying, transitioning from traditional yard drying methods. The coffee is grown at 1,250–1,600 MASL, featuring Bourbon, Catuai, and Arabe varietals. After handpicking, the cherries undergo 24 hours of fermentation before being washed to remove mucilage. They are then sorted and dried on raised beds in a controlled greenhouse environment. The meticulous process includes destoning and unwanted particles, hulling, color sorting, and size grading to ensure uniformity and high quality. The final result is a cup with delightful notes of black tea, honey, tangerine, and sweetbread pastry, perfect for pour-over, auto-drip, full immersion, or espresso. El Mezcal takes its name from a local tree that provides generous shade to the coffee plants. Thanks to E-Cafe Chiapas, these 12 farmers have transitioned from selling to local markets to producing exceptional, globally recognized specialty coffee.

Nestled in the highlands of western Guatemala, Huehuetenango’s unique microclimate, rich volcanic soils, and high altitudes—reaching up to 2,000 meters—create the perfect conditions for cultivating exceptional coffee. This region is famous for producing beans with bright acidity, complex fruit flavors, and a rich, full body that are celebrated among coffee connoisseurs. This specific lot, sourced from Unitrade Coffee, combines the expertise of smallholder farmers in San Pedro Necta and Huixoc. These farmers follow traditional practices that have been passed down through generations, preserving the natural characteristics of their coffee. The coffee is processed with great care, undergoing a fully washed process and sun drying, which brings out the clarity and vibrancy in the cup. As an SHB (Strictly Hard Bean) coffee, these beans grow at altitudes of 1,500 meters and above, maturing slowly and developing enhanced flavor complexity. The European Preparation (EP) standard ensures that only the best beans, size 15 and above, are selected, sorted, and meticulously cleaned to remove any defects or impurities, guaranteeing a flawless cup every time. With tasting notes of brown sugar, lemon and lime, red apple, and walnut, this coffee offers a delightful balance of sweetness and brightness. The crisp acidity from the citrus and apple notes is perfectly complemented by the warmth of brown sugar and walnut, creating a truly enjoyable coffee experience. Ideal for pour-over, drip, or French press, this Huehuetenango coffee is perfect for those who appreciate a vibrant, well-rounded cup. Sourced from Cafescor (Cafes Especiales Corquin), a cooperative founded in 2012 by small coffee producers, this coffee reflects the dedication of 131 active members who have come together to produce exceptional specialty coffee. The cooperative farms cover approximately 400 hectares, cultivating a variety of high-quality coffee beans including Caturra, Catuai, Bourbon, Lempira, Parainema, and Ihcafe 90 at altitudes ranging from 1200 to 1700 meters above sea level. What sets this coffee apart is not only its distinct flavor profile but also the commitment to sustainable practices. With certifications such as Fair Trade, USDA Organic, UTZ, and Rainforest Alliance, Cafescor focuses on both environmental stewardship and the well-being of its community. The coffee undergoes a washed process at the state-of-the-art Beneficio Cafescor wet mill, ensuring a clean and consistent cup.
